At its simplest, an independent bottler sources whisky from distilleries (often in the form of individual casks), then matures and bottles it under their own brand. Unlike distilleries, which typically blend casks to create consistent “house styles,” indie bottlers embrace the unique character of each cask. No two releases are the same. That’s the magic.
It’s a rare privilege to open up the flavour possibilities of whisky this way—unearthing casks that are overlooked, under appreciated, or just too niche for a mainstream audience. For the drinker, it means discovering rare and unusual whiskies you won’t find in shops or supermarkets. For the bottler, it means taking on a huge amount of risk and responsibility.

The GreatDrams Origin Story
Greg Dillon didn’t start out as a whisky bottler. His career began in brand strategy, helping global drinks brands find their voice. But something was missing. He didn’t want to just build other people’s stories—he wanted to tell his own.
So in 2012, he launched the GreatDrams whisky blog, sharing insights from distillery tours, interviews, and tastings. The site gained a following. Then came a question from Kirsty that changed everything: “Why not bottle the whisky yourself?”
That idea—half ambitious dream, half logistical nightmare— became reality when Greg and Kirsty took the plunge on it
together. They built connections with distilleries, brokers, and warehouse managers. They sampled hundreds of casks. And in 2016, GreatDrams released its first bottling.
The rest, as they say, is liquid history.

Being an independent bottler means betting on your palate. Every cask you buy is a commitment—of money, reputation, and taste. There’s no safety net. No master blender to smooth out the rough edges. If the whisky isn’t good, it doesn’t go in a bottle. Full stop.

It means hauling boxes, labelling by hand, and fielding emails about customs delays. It means rejection— turning down 19 out of 20 casks, because “good enough” isn’t good enough.
But it also means joy. The joy of discovering a cask that sings. The thrill of pulling the first sample and knowing instantly: this is the one. The privilege of sharing something utterly unique with people who care. The fun of writing irreverent tasting notes, designing labels that pop, and watching thousands of people and even whisky clubs around the world crack open a GreatDrams release and toast your work.

What Makes a GreatDrams Release?
Every GreatDrams bottle starts with a cask. Not just any cask— but one with character, story, and flavour worth shouting about. Greg & Kirsty source casks from all over Scotland, England, America and new-age whisky producing markets too, often putting these casks into finishing casks for additional flavour development—like rye, PX sherry, or peated casks—to create something genuinely distinctive.
There’s no house style to conform to. A 12-year-old Rum cask matured North British will taste wildly different to a 27-year-old grain from Invergordon. And that’s the point. Every bottle is a snapshot in time. A one-off moment that can’t be recreated.
Some highlights? The Craigellachie Peated Cask Finish that turned heads with its tropical-meets-smoky profile. The Benrinnes PX sherry cask finished single malt with its rich, meaty depth. And of course, the Campbeltown blended malt that scored top honours at the World Whiskies Awards.
