An exciting expression from one of the youngest distilleries in Scotland, Aurora is a Sherried single malt with a mellow flavour profile.

There have been distilleries in Scotland for centuries and many of the big names that are so well established today have been around for the better part of those centuries.

Wolfburn Distillery on the other hand, is brand new in comparison. Based in Thurso, the most northerly town on the mainland, Wolfburn still manages to find a local root and connection to the colourful history of the area.

Thurso has origins that go all the way back to Viking invaders, who first set it up as a way to access Scandinavia as well as the northern Scottish islands. It is surrounded by glorious Scottish scenery, which really can’t be beat.

Wolfburn as it is today was set up in 2013, on the same site that a distillery had existed 150 years before. The ruins were little more than rubble at that time but today it is a fully functioning distillery using local ingredients to craft some great malt.

Aurora Sherried Single Malt Highland Scotch Whisky

Wolfburn have a wide range of malts to their name with a really strong core of expressions. They have various types of maturation, including American oak, ex-Bourbon and Sherry casks. Aurora is their Sherry cask single malt and it is a great example of the malt they make and their maturation skills.

The malt has a typically Highland flavour profile with a light body, making it distinct from the heavily Sherried malt found in the Speyside region. The Sherry flavour here goes really well with the fresher notes of the Highland region.

Tasting notes for Wolfburn Distillery Aurora Highland Single Malt Scotch Whisky

Bottle cost: £40.63

The nose opens with fresh notes of cut grass, orchard fruits and crisp apples. Oak wood with a delicate hint of cinnamon also comes through.

The palate is full of fruit. Pears, melon and raisons appear. Darker notes of coffee and chocolate complemented by sweet nuts, caramel and oak wood.

The finish is bold and lingers on oak wood and spice.

Aurora is a well executed Highland malt with great sherried flavours throughout. Wolfburn is definitely doing right by the predecessors with this malt.
