We wanted to bottle a cask from the English Whisky Distillery for ages, then when the samples arrived… wow… we bought this (and several others) the same day. 95/100 at the IWSC confirms the instinct, but we didn’t need the medal to know. The liquid told us immediately.
THE DOSSIER
TASTING NOTES
NOSE
Dark and generous. Sticky dried fruit, warm brown sugar, a layer of raisin that the PX has built carefully over seven years. Underneath: the malt, still present, still providing structure.
PALATE
Rich and layered. The seven years in Pedro Ximenez has done real work. This isn’t a sherry-finished whisky, it’s a sherry-matured one. Dark cherry, stewed plum, a warmth that builds slowly across the palate. The bourbon foundation beneath keeps it from tipping into sweetness overload. Textbook PX influence, applied with patience.
FINISH
Long. Warm. Slightly drying in the best possible way, as good sherry casks always are. The fruit stays. The spice lingers. You will come back to this glass.

WHY THIS CASK
The English Whisky Co. has been making spirit in Norfolk since 2006. Most of it goes out under their own label. We had been keeping an eye on them for a while, looking for the right cask. This one, 4 years in bourbon then 7 years in first-fill PX, was the one that stopped us. We didn’t taste it and think ‘good, we’ll take it.’ We tasted it and reached for the paperwork. 200 bottles globally is the entire output of this single cask. We have them all.
THE DISTILLERY, HONESTLY
The English Whisky Co. is one of the older English distilleries, which in a scene that mostly launched after 2010, means they have actual age on their side. That matters here. 11 years is not achievable without time. They’re not making whisky to be fashionable. They’re making it to be good. This cask is the evidence.

POINT 1
A Gold Medal at the IWSC with a score of 95 is a score that sits alongside the finest expressions judged that year, the judges didn’t know it was English when they scored it and that’s the point.
POINT 2
Seven years in a first-fill PX cask is structural sherry influence, not cosmetic. The maturation isn’t finished in PX, it spent the majority of its life there. That’s why it tastes the way it does.
POINT 3
200 bottles. No retail. No restocking. This cask is now empty. We have what we have.

Neat, in a Glencairn – this is a rich whisky and it doesn’t need anything added initially, let it sit for a few minutes and the PX sweetness will open considerably

A single drop of water unlocks the orchard fruit that sits just beneath the sherry, try it without first, then with, they’re noticeably different

Food pairing: a square of good dark chocolate, 70% or above, the tannin in the chocolate cuts the sweetness and makes both things better
