Midleton Very Rare unveils world-first Irish Chestnut Edition, A World-First Whiskey Finished in Casks Crafted Entirely From Irish Sweet Chestnut

Shaped by Irish nature, craft and provenance, Irish Chestnut Edition pushes the boundaries of Irish whiskey through exceptional wood management and craftsmanship, marking the inaugural release in the new Rare Wood Collection

Midleton Very Rare today unveils Irish Chestnut Edition, a limited-edition whiskey finished in casks crafted entirely from Irish sweet chestnut sourced from a single Irish estate. The release marks the inaugural expression in the new Rare Wood Collection, introducing a new exploration into how exceptional and unconventional woods can shape extraordinary Irish whiskey.

For centuries, Irish whiskey looked beyond Ireland’s shores for the casks that defined some of its most celebrated expressions. With Midleton Very Rare Irish Chestnut Edition, that story takes a remarkable new direction. Inspired by a selection of exceptional Irish sweet chestnut trees, grown on the historic Cappoquin Estate in County Waterford, Midleton Very Rare has created a whiskey whose connection to Ireland extends beyond where it was distilled, to the very wood that helped define its unique character and taste.

Nearly a decade in the making, the release is a celebration of Irish nature and craft, bringing together generations of stewardship, exceptional coopering and Midleton’s mastery of whiskey-making.

The journey began in 2017 when just six carefully selected Irish sweet chestnut trees (Castanea sativa) were harvested from the carefully managed woodland of Cappoquin Estate, home to the Keane family since 1735. Overlooking the Blackwater Valley, the estate has been cared for and nurtured by generations of the same family, with each tree individually selected as part of the estate’s considered approach to woodland management. From there, the timber embarked on a remarkable journey. It was transformed into bespoke casks through a meticulous process of natural seasoning and traditional coopering in Spain, drawing upon centuries of internationally recognised cooperage and seasoning expertise. The casks then returned to Ireland, where a specially selected marriage of light, medium and heavy style Midleton Single Pot Still whiskeys, originally matured in first fill and refill bourbon barrels, were finished in the Irish sweet chestnut casks for a further five years. The result is the first whiskey in the world to be finished in casks crafted entirely from Irish sweet chestnut wood sourced from a single Irish estate, a category-first innovation that unites Midleton’s distilling expertise with a uniquely Irish provenance.

Irish sweet chestnut presented both opportunity and sacrifice. Naturally more porous than traditional oak, it encourages a greater interaction between spirit and cask while demanding significantly higher maturation losses. The resulting whiskey delivers remarkable depth and complexity, revealing rich layers of honey-drizzled red apple, caramelised orange peel, melted chocolate and toffee fudge, complemented by warming woodland spices and rich, nutty undertones, balanced by Midleton Very Rare’s signature elegance and a luxurious, lingering finish. A flavour profile shaped by Ireland’s land, climate and natural materials, one that cannot be replicated anywhere else.

Kevin O’Gorman, Master Distiller at Midleton Distillery, said: “Wood has always played an essential role in shaping the character of our whiskeys, but with Irish sweet chestnut we saw an opportunity to explore something entirely new. Moving beyond traditional oak, we wanted to understand how this exceptional wood could bring a new dimension to one of our finest whiskeys. That question set us on a journey of discovery spanning nearly a decade, resulting in the world’s first whiskey finished in casks crafted entirely from Irish sweet chestnut.

When we filled these casks, we couldn’t know exactly how Irish sweet chestnut would influence the whiskey, but what we discovered was something genuinely distinctive, a richness, texture and complexity unlike anything we’d experienced before. The Midleton Very Rare Irish Chestnut Edition is a whiskey that could only have come from Ireland, defined by its landscape, its craftspeople and the patience to allow nature and time to do their work. We’re proud that it becomes the inaugural expression in the Rare Wood Collection, which will continue to explore how exceptional woods can shape extraordinary Irish whiskey.”

Sir Charles Keane of Cappoquin Estate added: “For generations, our family has cared for these woodlands with the responsibility of passing them on in good health to those who follow. Seeing a small number of these rare, sweet chestnut trees become part of the story of Midleton Very Rare reflects that same long-term thinking, respecting nature, valuing craftsmanship and allowing time to create something that will endure.”

Limited to just 800 case equivalents globally, Midleton Very Rare Irish Chestnut Edition will be released globally from 8th October 2026 with an RRP of €440. Bottled at natural cask strength (56.1% ABV), it stands as one of the rarest releases in the history of Midleton Very Rare.

More than a limited edition, Midleton Very Rare Irish Chestnut Edition is an expression of place, craft and natural rarity. A whiskey whose story begins with an Irish tree, and whose character could only have been shaped by Ireland itself.

Midleton Very Rare Irish Chestnut Edition tasting notes

Nose: Decadent aromas of honey-drizzled red apple and caramelised orange peel. Luscious tones of smooth, melted chocolate and toffee fudge are harmoniously balanced by the heightened woodland spices including nutmeg, cinnamon and sandalwood. The rich and nutty undertones further accentuate the savoury nature of this wonderfully complex whiskey.

Taste:  Sweet orchard fruits with subtle hints of citrus are closely followed by generous waves of vanilla, chocolate shavings and soft wood tannins, complementing the pot still spices and delicate herbs. The spices continue to build with notes of freshly crushed pepper and a mild prickle of chilli oil, while carefully balanced by the textured and full-bodied character of this aged pot still whiskey.

Finish: Lasting finish which sees the fruits slowly fading, leaving the pot still spices and chestnut wood to have the final say.
