Bourbon finished in PX is not a new idea. Bourbon finished in PX for 18 months, single cask, at this quality level, that’s rarer. The Gold Medal was a nice confirmation of what we already knew when we tasted it.

TASTING NOTES
NOSE
Delicate aromas of oak, honey, cinnamon and baked apple. The bourbon foundation stays present beneath the PX influence, giving the nose genuine breadth.
PALATE
Rich and layered: pumpkin pie, cranberry sauce, toffee and brown sugar. 18 months in Pedro Ximenez has added real body. The complexity here is punching well above the age statement.
FINISH
Fruit and sweet notes evolve slowly and linger. Clean, not cloying. The IWSC panel called it a perfect Thanksgiving whiskey. We’re not arguing.

WHY THIS CASK
We look for American whisky with enough inherent character to carry additional maturation. Kentucky bourbon production is dominated by a handful of large distilleries and most single cask releases come from the same stock. We look for spirit with backbone. This had it. Five years in Kentucky oak, then 18 months in Pedro Ximenez. The bourbon character survived intact and the two things coexist rather than one overwhelming the other. The Gold Medal confirmed the balance landed. We agreed.
