We weren’t going to release this whisky, it was going to be kept for private events and marquee events but sitting on it felt wrong. Twenty-seven years is a long time to keep something to yourself.

TASTING NOTES

NOSE

Vanilla fudge first, warm and generous. Then salted caramel and dried apricot, the kind of quiet complexity that takes decades to develop. Nothing sharp, nothing aggressive. This is grain whisky that has earned the right to be unhurried.

PALATE

Silky, the cask has rounded every edge. Creamy toffee leads, with candied peel and a whisper of toasted oak following behind. The texture is the point here, this feels like something you should be drinking very slowly.

FINISH

Long and mellow. Soft spice fades in gradually and stays. There’s no abrupt end, it just gently dissolves, leaving warmth and a faint ghost of dried fruit. You’ll find yourself checking the glass to see if there’s more.

WHY THIS CASK

Invergordon produces roughly 40 million litres a year. Almost none of it appears as a named single cask because almost all of it goes straight into the Whyte and Mackay blends. Getting a 27 Year Old single cask from Invergordon and keeping 50 of them in the UK took considerable patience and a fair amount of luck. We weren’t looking for this specifically. It surfaced. We moved quickly. That’s usually how the best ones work.

THE DISTILLERY, HONESTLY

Invergordon gets described as ‘industrial’ a lot, which is fair. It’s a vast grain distillery in the Highlands that produces at scale for the blending industry. What that framing misses is that grain whisky aged properly in a good cask produces something fundamentally different from single malt: smoother, more approachable, often more quietly complex. Invergordon at 27 years is not a compromise. It’s a different kind of excellence.

YOUR FIRST POUR

Neat, in a Glencairn. Give it five minutes open before you drink as grain whisky at this age opens slowly, but trust us; your patience will be rewarded

A few drops of still water is the move if you want the dried fruit to come forward, but don’t add too much as the texture is part of what you’re paying for

If you’re sharing it, don’t chill it; one large ice cube maximum but room temperature is where this is best
